Mexican eatery expands

VERNON — Bo Kennedy and Chad Wieber are both avid snowboard and skateboard lovers, who will indulge themselves when the chance arises. However, both are also very busy entrepreneurs who spend much of their time working in their restaurant, Taco Hombre, on Main Street in nearby Warwick, N.Y.

And now, things have been so good that they’ve expanded and opened a second location at Cobblestone Village at the footbridge of Mountain Creek on Route 94.

Taco Hombre, which features a large array of Mexican cuisine, was celebrated its Vernon grand opening last week, although the restaurant has actually been open since the start of the new year. The Warwick location, at 16 Main St., has been open since December 2010.

Why two? It seems that Mountain Creek is too good a location to pass up.

“We just feel that each community should have a little Mexican flavor, and Mountain Creek just seemed to be a logical next step,” said Kennedy, whose family used to own the Fire Place restaurant in Paramus. “Our restaurant is fully based on Mexican food. We have tacos, burritos, quesadillas, homemade tamales, fresh made guacamole, as well as fresh pico di gallo. It’s more of a family restaurant (with a) snowboarding, skateboarding atmosphere.”

In addititon, they have a special version of Coke, Mexican Coke, made with sugar cane instead of high fructose corn syrup, and some other Mexican sodas called Jarritos.

“And they come in many flavors, including mango, pineapple and mandarin, as well as assorted sodas and juices,” said Kennedy, a lifelong Warwick resident.

In their new Vernon location, open from 11 to 9 Tuesdays through Saturdays and 11 to 8 on Sundays, they bring a sporting atmosphere with a large-screen TV, typically playing skateboarding and snowboarding videos.
